Snow peas and sugar snap peas first come into season in April and are best in July and August. Both are often referred to as mangetout (or mange tout ‘ eat everything’ in French) as for the type of pod only developing very small peas: so the entire pod is edible!

You can eat them raw, throw them into stir fries or sautéed quickly – no more than a couple of minutes with a zest of lemon, olive or sesame oil and salt.
