Cauliflower contains some of almost every vitamin and mineral that our body need while being very low in calories.

One of the most remarkable features of cauliflower is its high choline content, an essential nutrient that many people are deficient in;. Insufficient choline intake may lead to an increased risk of neurological disorders like dementia and Alzheimer's; Also those who don’t consume enough choline may have a higher risk of liver and heart disease.

One cup of cauliflower contains 45 mg of choline (or about 11% of the adequate intake for women and 8% for men), this plays a major role in maintaining the integrity of cell membranes, synthesising DNA, supporting metabolism and helping to prevent the accumulation of cholesterol in the liver. Choline is also involved in brain development and the production of neurotransmitters that are necessary for a healthy nervous system.

Not many foods contain choline. Cauliflower, along with broccoli, is one of the best plant-based sources of the nutrient.
